Barbecued Gourmet Potatoes

Preparation Time: hour 10 minutes
Cooking Time: hour 15 minutes
Serves: 4
Ingredients

500g or 4 potatoes, (Royal Blue, Ruby Lou), large, unpeeled
2 tblspn fresh thyme
2 tblspn olive oil
coarse sea salt

Method

  1. Boil, steam or microwave potatoes until just tender. Drain.
  2. Place potatoes in a bowl with the oil and thyme leaves.
  3. Marinate for ½ hour. Sprinkle with salt.
  4. Cook potatoes on a preheated barbecue until golden brown on each side.
Tip: The potatoes can be flattened a little with a potato masher before barbecuing. This will make browning easier and give crispy edges.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
