Crunchy Potato Balls

Preparation Time: hour 6 minutes
Cooking Time: hour 15 minutes
Serves: 4 (makes 16 balls)
Ingredients

500 g potatoes, (Royal Blue or Ruby Lou), unpeeled
100 g cream cheese
1 tspn parsley
2 tspn chilli sauce
salt and pepper
2 cup cornflakes, crushed

Method

  1. Boil, steam or microwave potatoes until tender. Drain.
  2. Mash potatoes; add cream cheese, chilli sauce, parsley and salt and pepper to taste Mix well. Roll into balls, then in crushed cornflakes. Place on a tray.
  3. Bake for 12 minutes, at 200ºC.

Cooking Times:

6 -10 minutes microwaved
15-20 minutes boiled
10-15 minutes steamed
12 minutes baking

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
