Egg in Baked Potatoes

Method
- Microwave or oven bake whole potato whole until tender.
- Cut around the top of the potato to form a lid opening.
- Scoop out the potato, leaving 1 cm of flesh under the skin,
- Mix flesh with butter, sour cream, dill. Season to taste.
- Line each potato base with some of the filling. Break an egg into each one. Sprinkle with cheese.
- Bake in 200ºC oven until egg is set, or microwave for 6-8 minutes on
- High, on a plate or in the base of the Microwave Capsule.
Cooking Times:
12 minutes microwaved 48 minutes oven baked

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
