Egg in Baked Potatoes

Preparation Time: hour 5 minutes
Cooking Time: hour 12 minutes
Serves: 4
Method

  1. Microwave or oven bake whole potato whole until tender.
  2. Cut around the top of the potato to form a lid opening.
  3. Scoop out the potato, leaving 1 cm of flesh under the skin,
  4. Mix flesh with butter, sour cream, dill. Season to taste.
  5. Line each potato base with some of the filling. Break an egg into each one. Sprinkle with cheese.
  6. Bake in 200ºC oven until egg is set, or microwave for 6-8 minutes on
  7. High, on a plate or in the base of the Microwave Capsule.

Cooking Times:

12 minutes microwaved
48 minutes oven baked

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
