Kebab of Potato, Sausage, Cherry Tomatoes and Mushroom

Preparation Time: hour 20 minutes
Cooking Time: hour 15 minutes
Serves: 4
Ingredients

4 potatoes, (Royal Blue) unpeeled, quartered
16 cherry tomatoes
16 button mushrooms, sliced
chipolata sausages, or 4 sausages chopped into 4 cm pieces
8 metal skewers

Marinade
2 tspn lemon rind
6 tblspn olive oil
Salt and freshly ground pepper

Method

  1. Boil, steam or microwave potatoes until just tender. Drain.
  2. Thread the potatoes, tomatoes, mushrooms and sausages alternatively onto the skewers.
  3. Mix lemon rind, oil, salt and pepper. Pour the mixture over the kebabs and marinate for 15 minutes.
  4. Place the kebabs on a pre-heated grill or barbecue plate. Grill for 7 minutes on each side or until the sausages are cooked.
  5. Serve with mango chutney or barbecue sauce
Tip: Metal skewers are used to ensure the kebab cooks through, as they conduct the heat better than bamboo.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
