Nicoise Salad

Preparation Time: hour 10 minutes
Cooking Time: hour 15 minutes
Serves: 4
Ingredients

12 gourmet potatoes (choose from Royal Blue, Ruby Lou or Nadine) unpeeled, halved
200g green beans, trimmed, and blanched
425g can tuna in springwater, drained
½ bunch chives, finely chopped
½ red onion, diced finely
1 punnet cherry tomatoes, halved
1 avocado, sliced
1 cup black olives, pitted
4 anchovy fillets, chopped (optional)
lemon zest to garnish
1 cup French dressing

Method

  1. Boil, steam or microwave potatoes until tender.
  2. Drain.
  3. Combine all ingredients in a large bowl. Toss gently.
  4. Sprinkle with lemon zest.
  5. Serve with fresh, crusty bread.

Cooking Times:

6 -10 minutes microwaved
15-20 minutes boiled
10-15 minutes steamed

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
