Traditional Potato Salad with Avocado Dressing

Ingredients
4 potatoes (choose from Royal Blue, Ruby Lou or Nadine) unpeeled, quartered 4 rashers rind less bacon, chopped and grilled 3 spring onions, finely chopped
Dressing: 2 large avocados ½ cup sour cream juice and grated rind of ½ lime ½ green chilli, finely chopped (optional) salt and pepper to taste

Method
- Boil, steam or microwave potatoes until tender.
- Drain.
- Fold through spring onions and bacon through potatoes.
- Pile onto a salad plate and spoon over potatoes.
Cooking Times:
6 -10 minutes microwaved 15-20 minutes boiled 10-15 minutes steamed
