Ingredients
5 medium potatoes, washed
450g plain flour
2 teaspoons baking powder
Salt and pepper
600ml milk or water
Vegetable colouring
350g potatoes, finely grated
125g chicken seasoning
Oil for frying

Method
- Cut each potato lengthways into wedges.
- Par cook by boiling for 5 minutes.
- Sift the flour, baking powder and chicken seasoning into a large bowl.
- Slowly whisk in the liquid, beat well.
- Add colouring and grated potato, mix well.
- Dip each wedge into the potato batter and deep fry for 2-3 minutes until crispy.
