Mexican Potato Boats

Ingredients
4 large potatoes, microwaved until tender
3 bacon rashers, chopped
1/2 cup grated tasty cheese
1/2 cup grated mozzarella
Sour cream
Mild salsa
Spring onions, chopped

Method
- Cut each potato in half and scoop out most of the flesh.
- Cut each half again lengthways.
- Fry bacon until crisp and mix with potato flesh and cheeses.
- Divide the potato mixture between potato skins.
- Cook under a hot grill for 5 minutes until golden.
- Top with salsa, sour cream and spring onions.
