Mexican Potato Boats

Cooking Time: 15 minutes
Serves: 4
Ingredients

4 large potatoes, microwaved until tender
3 bacon rashers, chopped
1/2 cup grated tasty cheese
1/2 cup grated mozzarella
Sour cream
Mild salsa
Spring onions, chopped

Method

  1. Cut each potato in half and scoop out most of the flesh.

  2. Cut each half again lengthways.

  3. Fry bacon until crisp and mix with potato flesh and cheeses.

  4. Divide the potato mixture between potato skins.

  5. Cook under a hot grill for 5 minutes until golden.

  6. Top with salsa, sour cream and spring onions.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
