Ingredients
2 large potatoes, washed
100g ricotta cheese
½ green capsicum, chopped
3 tblspn tomato paste
1 tblspn Parmesan cheese, grated
1 tblspn dried mixed herbs

Method
- Heat oven to 200°C.
- Cut potatoes lengthways into 1cm thick slices.
- Bake on a greased tray for 15 minutes.
- Remove potato from oven and top with tomato paste then ricotta cheese.
- Top with capsicum, herbs and Parmesan cheese and bake for a further 10 minutes.
