Mini Pizzas

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves: 4
Ingredients

2 large potatoes, washed
100g ricotta cheese
½ green capsicum, chopped
3 tblspn tomato paste
1 tblspn Parmesan cheese, grated
1 tblspn dried mixed herbs

Method

  1. Heat oven to 200°C.

  2. Cut potatoes lengthways into 1cm thick slices.

  3. Bake on a greased tray for 15 minutes.

  4. Remove potato from oven and top with tomato paste then ricotta cheese.

  5. Top with capsicum, herbs and Parmesan cheese and bake for a further 10 minutes.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
