Potato and Egg Scramble

Cooking Time: 10 minutes
Serves: 4
Ingredients

8 medium eggs, lightly beaten
4 small potatoes, grated
1/4 cup milk
Salt and pepper
2 tblspn chopped chives

Method

  1. Microwave grated potato for 3 minutes, mixing after each minute.

  2. Combine eggs and milk in a large bowl. Add potato and chives and season with salt and pepper. Mix well.

  3. Microwave on high for 3 minutes, mixing well with a fork after each minute. Microwave for a further 30 seconds if required.

  4. Fold together until cooked through. Serve with hot toast.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
