Potato and Egg Scramble

Ingredients
8 medium eggs, lightly beaten
4 small potatoes, grated
1/4 cup milk
Salt and pepper
2 tblspn chopped chives

Method
- Microwave grated potato for 3 minutes, mixing after each minute.
- Combine eggs and milk in a large bowl. Add potato and chives and season with salt and pepper. Mix well.
- Microwave on high for 3 minutes, mixing well with a fork after each minute. Microwave for a further 30 seconds if required.
- Fold together until cooked through. Serve with hot toast.
