Potato Nests

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients

1kg potatoes, peeled, cooked and mashed
1 tblspn milk
1 tblspn butter
1 egg
600g low-fat beef mince
1 medium onion, finely chopped
1 clove garlic, crushed
2 tblspn tomato paste
1 tspn fresh basil,chopped
1 x 400g can chopped tomatoes
100g button mushrooms, sliced
1 small zucchini, grated
Salt and pepper

Method

  1. Beat milk, butter and egg into the mashed potatoes and season with salt and pepper.

  2. Place the mixture into a piping bag and pipe “nests” on a greased or non-stick baking tray.

  3. Brown under the grill or in a hot oven (220 degrees) for approximately 10 minutes or until golden. Keep warm.

  4. In a large pan, fry the onion, garlic and mince until browned. Add all other ingredients and simmer for 20 minutes.

  5. Spoon the mixture into the nests and serve.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
