Ingredients
2 large potatoes, peeled and grated
1 carrot, peeled and grated
1 onion, peeled and grated
1 egg
Salt and pepper
Vegetable oil
1/4 cup self raising flour

Method
- Heat oil in a pan.
- Combine all other ingredients and mix well.
- Drop tablespoonfuls of the mixture into the pan and flatten into a pancake.
- Cook over low heat for 5 minutes each side until crispy.
