Potato Pikelets

Ingredients
3 cups diced raw potato
1 medium onion, quartered
2 eggs
¼ cup natural yoghurt
½ cup wholemeal flour
½ cup grated Parmesan cheese
¼ cup chopped fresh herbs, such as parsley, chives and rosemary
2 rashers bacon, finely chopped (optional)

Method
- Place all ingredients, except bacon, in a blender and pulse until roughly chopped.
- Fry spoonfuls of the mixture on both sides until golden brown.
