Mashed Potato Cakes

Ingredients
500g or 2 large potatoes, (Royal Blue, Ruby Lou), unpeeled
2 tblspn sour cream or mayonnaise
2 hard boiled eggs, roughly chopped
½ cup grated cheddar cheese
1 cup mixed cooked vegetables (corn, carrots, beans, peas)
¼ cup chopped flat leaf parsley
1 cup flour
2 eggs beaten
2 cup (200 g) breadcrumbs
oil to shallow fry

Method
- Boil, steam or microwave potatoes until tender.
- Drain.
- Combine potatoes, sour cream, hard boiled eggs, cheddar cheese, vegetables and parsley.
- Season with salt, then form into patties.
- Place the flour, beaten eggs and breadcrumbs into separate bowls.
- Dip the patties first into the flour, then egg and finally breadcrumbs.
- Place onto a tray or plate and chill for 15 minutes.
- Heat fry pan and add enough oil to cover the base. Fry patties in batches until golden brown. Drain on paper towel and serve with your favourite sauce.
Cooking Times: 6 - 10 minutes microwaved
15 -20 minutes boiled
10 -15 minutes steamed
5 minutes, frying
