Mashed Potato Cakes

Preparation Time: hour 23 minutes
Cooking Time: hour 15 minutes
Serves: 4
Ingredients

500g or 2 large potatoes, (Royal Blue, Ruby Lou), unpeeled
2 tblspn sour cream or mayonnaise
2 hard boiled eggs, roughly chopped
½ cup grated cheddar cheese
1 cup mixed cooked vegetables (corn, carrots, beans, peas)
¼ cup chopped flat leaf parsley
1 cup flour
2 eggs beaten
2 cup (200 g) breadcrumbs
oil to shallow fry

Method

  1. Boil, steam or microwave potatoes until tender.
  2. Drain.
  3. Combine potatoes, sour cream, hard boiled eggs, cheddar cheese, vegetables and parsley.
  4. Season with salt, then form into patties.
  5. Place the flour, beaten eggs and breadcrumbs into separate bowls.
  6. Dip the patties first into the flour, then egg and finally breadcrumbs.
  7. Place onto a tray or plate and chill for 15 minutes.
  8. Heat fry pan and add enough oil to cover the base. Fry patties in batches until golden brown. Drain on paper towel and serve with your favourite sauce.

Cooking Times:
6 - 10 minutes microwaved
15 -20 minutes boiled
10 -15 minutes steamed
5 minutes, frying

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
